TEQUILA / MEZCAL
Tequila, a small town in the Mexican state of Jalisco, has a population of around 29,000. Its name stands worldwide for the national drink of Mexico - tequila. The spirit is produced from the heart of the blue agave (Agave Tequilana Weber). This heart is called "House of the Moon" in Mexico, which is called "mezcal" in the Indian language.
The history of tequila goes back to the times of the Aztecs, who made a drink called "pulque" from the juice of the algave. After a slight fermentation, pulque also showed slight traces of alcohol. When Spanish soldiers brought distillation knowledge to Mexico in the 16th century, the first agave brandies called "vino mezcal" were produced in the village of Tequila. Today tequila is produced with an alcohol content of 38% - 40%, but there are also varieties that contain up to 50% alcohol.
In Europe, tequila is usually served at parties with salt and lemon and drunk as quickly as possible. But there is another way: With noble tequila, which is stored in wooden barrels and tastes wonderfully spicy like exotic herbs or smells sweet like honey, it would be a scandal to adulterate its taste with lemon and salt. Also, a good tequila is not simply tipped down, but you should keep it in your mouth for about ten seconds. This can burn a little at the beginning, but already from the second sip on the tequila tastes soft and mild. By the way, in case of very good sorts, one abstains from shot glasses and rather takes a cognac swivel or a higher stem glass in which the tequila is served at room temperature.
